Mothers Day Tea Party Scones and Lemon Curd

A Mother's Day Tea with Tea Party Scones and Lemon Curd is a wonderful way to help the grands host a special event with their Mother (and with you) for Mother's Day!

Tea party scones with lemon curd are an easy treat to make but they sound and look so fancy, don't you think?

 Cut It Up!

The scones mix up much like baking powder biscuits. Dry ingredients are mixed together first and then the butter is cut in with a pastry blender or with two knives as shown in the video. This is actually quite fun and the grands will get a kick out of it.

The liquid ingredients are then stirred in.

Special Touches for Tea Party Scones

You can add a special touch to your Tea Party Scones by adding mini chocolate chips, chopped nuts or chopped dried cranberries if you wish. What do the grands think their Mom will like? I love them all!

Roll and Cut Out the Scones

The dough is turned out onto a lightly floured surface and gently kneaded just a little bit (kneading too long will make the dough tough).

Roll the dough out on that same lightly floured surface to a thickness of ½ inch. Use a round biscuit cutter to cut round scones. Another option is to roll the dough into a large circle and cut into pie shaped pieces. The smaller rounds may be a bit more dainty served on a plate for Mother's Day though.

Warm Tea for Two and Tea Party Scones

The scones are best if served warm of course! So, brew some tea and make the lemon curd while the scones are baking.  The scones can be rewarmed a bit if you need to make them ahead, no worries.

How Can You TOP Scones?

You can top the tea party scones with all kinds of yummy toppings. We chose a homemade lemon curd for this special occasion.

Lemon Curd Topping

You are going to love this lemon curd on top of your scones. It adds such a citrusy zing without being overwhelming.

Zest 2 large lemons by finely grating off the peel. Squeeze and strain the juice of these same two lemons. Place the zest and juice of the two lemons, the sugar and the beaten eggs into the double boiler.

This recipe uses a double boiler so that the curd does not burn (which it does if using a plain saucepan, take my word for it). A double boiler is a great thing for the grands to learn about. Whisk the ingredients together and then cook until it is thickened and smooth.

Remove from the burner and stir in the butter, a little at a time.

Let the curd cool a bit before serving.

Tip: To prevent a heavy skin from forming on the top of the curd, lay a piece of plastic wrap on top, especially if saving to use later.

Personally I love the lemon curd, but the tea party scones are also delicious served with fresh sliced fruit of any type- and who can turn down a dab of whipped cream on Mother's Day?

Set a Pretty Table

Set out pretty teacups (or fun mugs), plates and napkins to make this a special tea party for Mom. Be creative with whatever you have, add a table cloth or a vase of flowers from the yard. Perhaps there are some fun hats and gloves in the dress up basket? Have some fun!

Ingredients
  

Scones Recipe:

  • 2 cups flour
  • 2 tsp. baking powder
  • ⅓ cups sugar
  • ⅛ tsp. salt
  • ⅓ cup unsalted chilled butter
  • 1 egg beaten
  • 1 teaspoon vanilla
  • ½ cup whipping cream
  • ½ cup May add extra ingredients like mini chocolate chips or chopped dried cranberries for variety or more

Lemon Curd Recipe:

  • Zest of 2 large lemons finely grated
  • Juice of 2 large lemons- strain to remove the pulp about ⅓ cup
  • 1 ⅓ cup sugar
  • 3 large eggs beaten
  • 5 ⅓ Tbsp. unsalted butter at room temperature

Instructions
 

Scones recipe

  • Mix dry ingredients.
  • Cut in butter
  • Add egg, vanilla and cream.
  • Barely knead the dough.
  • Roll out ½" thick
  • Cut into rounds (or roll out into a circle and cut into pie shaped pieces).
  • Bake at 375 degrees for about 15 min (barely browned)

Lemon curd instructions

  • Use a double boiler
  • Whisk the zest, lemon juice, sugar and eggs in the double boiler.
  • Cook till thickened and smooth.
  • Remove from burner, stir in the butter- a little at at time.
  • Put plastic wrap on top so it doesn't film over while cooling in the refrigerator.
