Scones Recipe:

Lemon Curd Recipe:
Zest of 2 large lemons
finely grated
Juice of 2 large lemons- strain to remove the pulp
about ⅓ cup

sugar

beaten

unsalted butter
at room temperature
Instructions
Scones recipe
Mix dry ingredients.
Cut in butter
Add egg, vanilla and cream.
Barely knead the dough.
Roll out ½" thick
Cut into rounds (or roll out into a circle and cut into pie shaped pieces).
Bake at 375 degrees for about 15 min (barely browned)
Lemon curd instructions
Use a double boiler
Whisk the zest, lemon juice, sugar and eggs in the double boiler.
Cook till thickened and smooth.
Remove from burner, stir in the butter- a little at at time.
Put plastic wrap on top so it doesn't film over while cooling in the refrigerator.
