It's State Fair Time!

It’s almost time for the State Fair. In our state it is held in September. The state fair was one of Papa’s yearly rituals growing up as they were avid 4H members.

What do you eat when going to the State Fair? Corn dogs of course! 

State Fair Mini Corn Dog Muffins

We have a recipe for a corn dog look alike that is fast and easy to make with no need to deep fat fry. Our grands love State Fair Mini Corn Dog Muffins and like to help making them.

Heart and Soul...

Corn dog muffin mix is a staple in our kitchen pantry and we always have a package of all beef hot dogs in the freezer. Those two ingredients are the heart and soul of this simple recipe.

Let the kids dump the two boxes of corn bread mix into a large mixing bowl.

Add the brown sugar and gently stir into the corn bread mix. They think it’s cool to pack the brown sugar and see it fall out in a molded shape!

How to crack eggs

Teach the littles to crack two eggs into a small dish and fish out any small egg shell pieces with the larger cracked shell. It’s fun to know this trick, that the egg shell itself more easily captures those small bits of stray shell then a spoon (or your finger)! 

Add the eggs to the dry ingredients.

Measuring liquid ingredients

Measure the milk into a glass measuring cup. Set the cup down on the counter. Let the kids look at the measuring lines from the side to make sure it is measured accurately. Pour the milk into the dry ingredient bowl. 

Drain the can of corn and then spoon it into the cornbread mix.

Stir gently, just until all ingredients are mixed. 

Hot dogs, sliced, please!

So now, those hot dogs! If your kiddo is old enough to learn to use a knife, cutting hot dogs provides a good knife handling skill builder. Unfrozen hot dogs are soft and easy to hold onto.

Using a cutting board, cut the hotdogs into ¼” pieces.

Loading those muffin cups...

Line the muffin tins with paper liners. Spray just a bit of non-stick spray in the bottom of each paper cup liner as these stick even to the papers. 

Drop 3-4 pieces of the sliced hot dogs into each muffin cup.

Use a gravy ladle or small measuring cup to pour the batter into the muffin tins, filling them to ¾ full.

Bake it baby!

Bake at 400 degrees for 14-18 minutes. They will be lightly brown and when poked with a toothpick it will come out clean.

Yum! State Fair Mini Corn Dog Muffins!

I just love these! Set them out on a plate to cool just a bit before eating. Some like some catsup to dip them in, just like a corndog, but Nana just likes them plain!

Equipment

  • Mixing bowl
  • Muffin tin

Ingredients
  

  • 2 packages of cornbread muffin mix 8 ½ oz
  • 2 Tbsp. brown sugar
  • 2 large eggs
  • 1 cup milk
  • 1 can 11 oz. whole kernel corn, drained
  • 5 all beef hot dogs sliced into ¼ inch slices
  • Paper muffin cup liners

Instructions
 

  • Mix all dry ingredients together.
  • Add eggs, milk and corn.
  • Place paper muffin cups in tins.
  • Put 3-4 slices of hot dog in each muffin cup.
  • Spoon cornbread mix over muffins.
  • Fill muffin cups ¾ full.
  • Bake at 400 degrees for 14-18 minutes.

      Update!
      Just made it but I used the entire package of hotdogs and put it in a grossed 9x13 pan and baked it at 350 for 35 minutes. I’ll be making it again for a very long time now! Thanks for the recipe!

    These look great! Have them cooling on the stove. Thank you for the recipe. I had to use cream instead of milk but they look yummy!
