Stir up some Easy Chicken Stir Fry fun

This Easy Chicken Stir Fry is a recipe the grands will love to help make and to help eat!

There are several good skills to learn in this quick-to-make favorite. I think that’s a plus to a recipe. The Easy Chicken Stir Fry ingredients are ones that can be kept on the shelf and in the freezer to have ready for drop in company too.

Tip: With just a tiny bit of effort the recipe is also gluten free. Just check the labels on your broth and soy sauce to make they are gluten free and you are good to go.

Don't forget the rice...

If I don’t start the rice first, I forget to do it and then get all done cooking the Easy Chicken Stir Fry and have no rice to put it on! I’m embarrassed to say it has happened more than once! Sigh.

Have the grands put the one cup of water in a small sauce pan, cover the pan, and bring the water to a boil. Add in the instant rice, cover it with the lid and turn the heat down to a simmer. Let the rice simmer until all moisture is absorbed. Rice is such an easy thing for the grands to learn how to cook and it can be used in so many meals.

I chose to use brown instant rice to get just a bit more fiber in the diet. That’s a great tidbit to tell the grands although they didn’t think it was too interesting! Ha!

Note: If you would prefer to make regular rice, start it a bit earlier so it will have time to cook. Cook according to package directions.

Start to stir the Easy Chicken Stir Fry

While the rice is cooking, fix the stir fry! That was much more interesting to the grands!

In a small bowl mix the chicken broth, soy sauce, corn starch, brown sugar and ground ginger. Set aside to use when the veggies are cooked.

Add the veggies

In a skillet (I love my Copper Chef Skillets), pour in the oil and place it on the burner over medium heat. Pour in the stir fry vegetables, taking care to not let the oil spatter.
Note: If you have a Wok this is a perfect time to pull it out of storage and use it. The grands will think it is cool!

Stir the vegetables around while they cook until tender.

Thicken the sauce

Add the liquid mixture to the stir fry vegetables. Cook until the broth mixture thickens. This is a fun skill to learn, how to thicken a sauce. It almost feels like magic!

Just for your info, thickening with cornstarch happens at the end of the cooking process and doesn't add a flavor to your sauce. Earlier we made a gravy thickened with flour which is a different technique. You may want to give that biscuits and gravy post a try later with the grands! Yum.

Back to our stir fry....

Add the chicken

Stir in the chicken (cooked and cut into pieces) and cook until the chicken is heated through.
Tip: Next time you are cooking chicken, cut an extra 1 ½ cups of the cooked meat into chunks and place in an air tight container or resealable freezer bag. Pull it out of the freezer to use for your next stir fry. It makes the meal that much easier!!

Serve up the Easy Chicken Stir Fry

Serve the Easy Chicken Stir Fry over a bed of the brown rice. Doesn't that make a pretty plate? Wowza!

Equipment

  • Frying pan
  • Spatula/turner
  • Saucepan

Ingredients
  

  • 1 cup water
  • 1 cup instant brown rice
  • 1 cup chicken broth
  • 2 tablespoon soy sauce
  • 2 tablespoon corn starch
  • 2 tablespoon brown sugar
  • ½ teaspoon ground ginger
  • 1 tablespoon oil
  • 16 ounce package of stir fry vegetables
  • 1 ½ cup cooked chicken cut into pieces

Instructions
 

  • Pour water into a small saucepan, cover and bring to a boil.
  • Add rice, turn heat down, simmer till moisture is absorbed.
  • In a small bowl mix chicken broth, soy sauce, corn starch, brown sugar and ground ginger. Set aside.
  • Pour oil in a skillet and place on burner over medium heat.
  • Pour in stir fry vegetables. Cook and stir until tender.
  • Add the liquid mixture and cook until the broth thickens.
  • Stir in the cooked chicken pieces and cook until chicken is heated through.
  • Serve the stir fry over a bed of cooked rice. Enjoy!!
