Graham Cracker & Frosting Queen
My mother was the queen of making Simple Graham Cracker and Frosting Sandwich Cookies. I remember eating them after school or making them for a picnic lunch in the tree house with my younger brother or best friend that lived next door.

This treat can’t be any easier to make and the little cooks will enjoy helping you or better yet, making them themselves.
Soft frosting is key...
Let the frosting sit out for a while so that it is easy to spread. Refrigerated frosting is hard, making it difficult to spread and often this causes the graham crackers to crumble. That can be so frustrating.
So, 1,2,3- let’s make it happen.
Break the graham cracker in half.
Spread frosting on one of the halves.
Place the second half on top as the “lid” for the sandwich cookie.
That. Is. It. Woo-hoo, let’s eat!
Use up left over frosting
An extra bonus of making Simple Graham Cracker and Frosting Sandwich Cookies is that they’re a perfect way to use up left over frosting. You know, the little container of frosting that disappears into the back of the refrigerator till it goes bad!
Buttercream Frosting Recipe
But if you need the most yummy frosting recipe ever, here is the buttercream frosting recipe that I use!! This is enough frosting for a cake so you may want to cut it in half or forth if only making frosting for these cookies!
Buttercream Frosting Recipe:
- ½ c. butter, at room temperature (1 stick)
- 1 ½ c. powdered sugar
- 1 T. heavy cream
- ½ tsp. vanilla extract
Place the butter in a bowl and whip until nearly white and very fluffy.
Add in the powdered sugar, heavy cream and vanilla extract and mix on low speed until blended.
Increase the mixer speed to medium and beat until light and fluffy. This will take several minutes. Be sure to scrape down the sides of the bowl to get the frosting evenly beaten.
You will love how this frosting spreads on the graham crackers!!
If you use this on a cake, be sure to let the cake cool first. Melted frosting is not cool. This frosting recipe works well to refrigerate and use again later for Simple Graham Cracker and Frosting Sandwich Cookies for treats!!

It’s fun to dip the frosting sides of the sandwich cookies in sprinkles for a colorful decoration.
Our little Grand loved making her own sandwich cookies and having a tea party with Papa.
