Yummy Homemade Granola Bars

Homemade granola bars are part of a healthy snack lesson in a nutrition class I teach at school. A snow day brought some of the grands our way. Yummy homemade granola bars were the perfect treat to make for our afternoon tea party. I think you will like them as well!

Toast the Oats

Let the grands measure the oats and nuts into a baking pan with sides. Place in a 350 degree oven for 10 minutes.

Measure the Ingredients

Measure the honey, butter and brown sugar into a small saucepan and heat until butter is melted. Stir as the mixture begins to bubble. Take off the heat and add the vanilla and salt. Do be careful with the hot pans around the grands. We had a little one get a small burn on the hand from a hot pan. Made me want to get an aloe vera plant again.

Mix and Make Them Yummy

Pour the heated mixture over the toasted oats when they come out of the oven and mix. Make sure the oats are completely covered so they will stick together.

Stir in the extra goodies- but save the chocolate till the oats cool off a bit or they will by melt.

Press Yummy Homemade Granola Bars into a Pan

We put our oat mixture into a 9x9” pan but I thought they were too thick. I think a 9x13” pan would make them thinner, easier to cut and more like a packaged granola bar. 

Press the oats into a 9x13” pan that is lined with either foil or parchment paper. We sprayed the bottom of a measuring cup but you can use greased hands as well. Press it down very firmly so it packs well.

Refrigerate...can't you hurry???

We stuck the bars in the refrigerator for a couple hours and then lifted them out of the pan and cut them up. In a 9x13” pan it works great to cut them in half lengthwise and then cut them crosswise in bar sized pieces. They look a lot like the ones out of the packages in the store that way.

We got a kick out of the younger grand asking for a Gorilla Bar! We decided that’s what we should call them from now on, Gorilla Bars! Ha!

Equipment

  • Baking sheet with sides
  • Saucepan (small)
  • 9x13 Pan

Ingredients
  

  • 3 cups quick rolled oats
  • ½ cup sliced almonds
  • ⅓ cup honey
  • ⅓ cup butter
  • ⅓ cup brown sugar
  • 1 teaspoon vanilla
  • ¼ teaspoon salt
  • ¾ cup extra goodies try shredded coconut, mini chocolate chips, dried fruit, or M&Ms
  • parchment paper or aluminum foil

Instructions
 

  • Place the oats and nuts on a baking sheet with sides. Bake for 10 minutes at 350 degrees. 
  • In a small saucepan, heat the honey, butter and brown sugar until melted and bubbly. Take off the heat and add the vanilla and the salt.
  • Stir in the yummy extras of your choice. (Wait until the mixture has cooled a bit before adding chocolate chips though, or they will melt!)
  • Place a piece of parchment paper or aluminum foil in the bottom of a 9×13” pan. Spray the bottom of a measuring cup (or your hands) and press the mixture evenly into the pan. 
  • Cool the bars for a couple hours. Lift the bars out onto a cutting board. Cut in half lengthwise and across into bars. Store in a covered container.
