So are you ready to make something special for mom for Mother’s Day?
Making muffins for Mom is a great idea, I promise. She will love them and she will feel special that you did this for her. Nana would be glad to help if possible! 🙂
Muffins are a great go-to for breakfast.
Muffins give you something special for serving breakfast in bed for mom. But, you can make them ahead so there is no big project early in the morning!
This easy to follow post helps you to learn how to make muffins like a pro. It is really easy. I’m not kidding and I’m not lying (in the family famous words of my niece).
Making Muffins for Mom
We will be making pumpkin muffins, but the basic idea works for all muffin recipes. Read over your recipe well in case there are special directions though.
I chose to make pumpkin muffins because that is what I had in my cupboard during our quarantine!! Make due, right?? Besides, I love pumpkin no matter what time of the year! I think your mom will, too.
This recipe came from my Aunt Ardith. She always brought pumpkin bread to our family Christmas get togethers. Yum. Thanks, Aunt Ardie!
Gather all your supplies...
First, always gather all of your supplies before starting a recipe. Get out your recipe and check that you have all of the ingredients, the needed baking pans and tools, and extra things like paper muffin liners. This prevents a stalled project or an extra trip to the store. I live 7 miles from town, so this is an important step for me!
Preheat the oven-
Start by preheating the oven to 350 degrees. Then get going making muffins for mom!
Use two bowls-
In a larger bowl, combine the sugar, eggs and oil.
Add the pumpkin and stir together.
Place the dry ingredients in a second bowl- flour, baking powder, soda, salt, and spices.
How to measure flour (dry ingredients)-
Let’s look at how to measure flour correctly. Use a dry measuring cup. These are the ones that are metal or plastic, not the glass ones used for measuring and pouring liquids. Spoon the flour into the cup, don’t dip the cup into the flour (that will pack it down). Use the straight edge of a knife or spatula to level off the top. Dump into the dry ingredients bowl.
Measure the baking powder by dipping the spoon into the powder and scraping on the straight edge of the container. If there isn’t a straight edge, level with the straight edge of a knife or spatula, just the same way you did with the flour.
Measure the soda, salt and spices the same way as the baking powder.
The spices are so pretty!
Have a little fun by putting them side by side on top of the flour. When I was young, this was my favorite part of making recipes with spices. The various brown colors look so cool! Humor me! 😉
Stir the dry ingredients together.
Add dry ingredients into the wet ingredients-
Add the dry ingredients into the liquid ingredients and stir. Then add the water and nuts (nuts are optional).
Mix just till combined-
Mix the batter just until combined. Don’t overmix. If you mix and mix the ingredients, the muffins will have big tunnel holes in them and the tops will be peaked like a mountain. Strange, I know.
Muffin tins ready-
Prepare your muffin tins by spraying them well with cooking spray or putting paper liners into each cup. I prefer the paper liners because it is so much easier to get them out of the muffin tin as well as easier to serve.
Pour the pumpkin muffin batter into the greased, or paper lined muffin tins. I like to use a gravy ladle to fill the cups because I spill less! Fill the cups ⅔ full so they have room to expand and not run over the edge.
Place the muffins in the oven to bake for 20 minutes.
Wash the dishes!! 😉
Hey, while the muffins are baking, remember to wash the dishes! You are Making Muffins for Mom, remember? Don’t leave dirty dishes and counters to be cleaned up!
Bake the pumpkin muffins till a toothpick comes out clean. Let them cool on a rack before putting in a covered container for storage.
How will you serve your Muffins for Mom?
What a great thing to serve mom for breakfast!! Take a bit of time to think how you can serve these up in the morning. Do you have a tray and some nice dishes to use? Don’t forget butter, a fork and a napkin. How about a few flowers from the yard in a vase? You could get these ready the night before.

Pumpkin Muffins for Mom
Equipment
- Muffin tins
- Paper Muffin Tin Liners
Ingredients
- 1 ½ cup Sugar
- ½ cup Oil
- 2 Eggs
- 1 15 oz can Pumpkin
- 1 ¾ cup Flour
- ½ teaspoon Baking Powder
- 1 teaspoon Baking Soda
- 1 teaspoon Salt
- ¼ teaspoon Cloves
- ½ teaspoon Cinnamon
- ½ teaspoon Nutmeg
- ½ teaspoon Allspice
- ⅓ cup Water
- ½ cup Nuts- chopped (optional)
Instructions
- Preheat the oven to 350 degrees.
- Combine and mix sugar, oil and eggs.
- Add pumpkin and mix.
- In separate bowl, mix together the dry ingredients.
- Add the dry ingredients to the wet ingredients.
- Add the water and nuts (nuts are optional).
- Stir only till mixed, don't overstir.
- Line muffin tins with paper muffin liners.
- Fill muffin cups ⅔ full with batter.
- Bake for 20 minutes, until a toothpick comes out clean.
