OK, so this week MOM is the bomb, it’s Mother’s Day this Sunday, but she will love fruit pizza. So, to top off your great preparations for Mother’s Day, grab the ingredients and your grands and Make Fantastic Fruit Pizza for Mom.
Prepared sugar cookie dough
A fruit pizza is perfect for so many occasions and it is so easy to make, especially with prepared sugar cookie dough. You are welcome to use your favorite sugar cookie recipe or even a boxed sugar cookie option, but grabbing a refrigerated tube of sugar cookie dough makes this project even that much faster. Whichever option you use, make sure the cookie dough is well chilled or it will spread out a lot and possibly spill off the edge of your pizza pan. Not good.
Take the cookie dough out of the tube, slightly grease your hands with cooking spray and press the cookie dough into about a 12 inch circle in the center of your greased, round Pizza Pan .

So the point of our fruit pizza in these pictures was to make it a tea time project. Because of that, we pressed the cookie dough out on the pizza pan and cut it into pieces. That way we could each take a piece, frost it, and decorate it ourselves. I will tell you, it was so much fun. This was my daughter's idea and it was inspired. The kids loved it.
But if you would like to have a really showy dessert, press the cookie dough out into a large circle on your Pizza Pan and don’t cut it into pieces. The next time I make one that way I will add a picture to this post.
We used a Pizza Stone to bake the cookie and it worked really well. But you could use a Pizza Pan of any type. The round shape is really nice. You can serve it right on the Pizza Pan . This can even be set on top of a cake stand for a party flair. As always, use what you have. You could put the cookie on parchment paper and slip it off your regular cookie sheet onto a decorative round tray if you prefer.
A soft cookie is the key
Bake the cookie until it just barely begins to brown and is set on the top. This guarantees a chewy cookie that is easier to cut after decorating. If the cookie is too crisp it breaks in funny ways and is hard to cut into nice pieces.
Let the cookie crust cool completely before decorating.
Cream cheese frosting
Let’s get the cream cheese frosting made while we are waiting for the cookie to cool. You may have a favorite recipe for this. If so, go for it. If not, a simple recipe is found below.
The frosting is made from cream cheese, butter, vanilla and powdered sugar. Make sure the cream cheese and butter are at room temperature. Cream them together will with an Electric Hand Mixer and then add the vanilla. Using an electric mixer is a great skill to teach the younger grands. Slowly add the powdered sugar and continue to mix until smooth and creamy. Yum.
Spread the frosting out onto the cooled cookie almost to the very edge. Kids love doing this. A Frosting Spatula makes it easier to spread the frosting smoothly, but even a butter knife works.
You can make it ahead
You can put on the frosting and keep the cookie until the next day to serve if you wish. You could even freeze the cookie alone if it is well covered with foil. But don’t put the fruit on top until is close to the time of serving. The crust tends to get soggy if it sits too long with the fruit on top.
Now for the super fun part, decorating with the fruit.
Select a number of types of fruit for the fruit pizza “toppings”. Fruit like pineapple chunks, strawberries, kiwi, raspberries, blackberries, grapes, mandarin oranges, mango, and blueberries work well. Cut the fruit into nice sized pieces with a Paring Knife and drain well if the fruit is from a can. Avoid fruits that turn brown easily, like bananas and apples. Place each type of fruit in a separate small bowl.
Like I mentioned before, we chose to frost and decorate each piece ourselves as a project. It made our afternoon “Hat Tea Party” extra special and fun. But it is so showy to make one large cookie to serve a group.
Add the fruit toppings- what design do we use?
Arrange the fruit on top of the frosted cookie in any way your heart desires. If your grand is doing this you may have to let go of the perfectly round decorated fruit pizza expectation you have in your mind. Perfection isn’t the point of doing a project with kids so let them plan and decorate without too much direction.
That being said, it does work well to create a pattern or at least suggest some pattern ideas. Many people circle one or two types of fruit around the edge of the crust. And then continue inward in a circle pattern.
But guess what? There are a myriad of ways to decorate! Woo-hoo, that means it will be different every single time. You can make stripes, zig-zags or a random design. All are beautiful because of the vivid fruit colors.

Make Fantastic Fruit Pizza for Mom
Equipment
- Pizza pan
- Paring knife
- Frosting spatula
Ingredients
- 1 tube refrigerated sugar cookie dough
- 8 ounce cream cheese softened
- ¼ cup butter softened
- 1 teaspoon vanilla
- 1 cup powdered sugar
- Variety of fresh/canned fruit cut into pieces &/or drained
Instructions
- Press cookie dough onto a greased pizza pan in about a 12-14 inch circle.
- Bake cookie according to package directions but only until starting to brown and setting on top. Let cookie cool.
- Start cream cheese frosting by creaming the softened cream cheese and butter.
- Add the vanilla and then slowly add the powdered sugar, mixing until smooth.
- Frost the cooled cookie with the cream cheese frosting.
- Cut each fruit up and place in separate bowls.
- Decorate the top of the fruit pizza with the fruit.
- Cut and serve. Enjoy!!
- Note- you can cut the cookie up into pieces before baking and individually frost and decorate your own smaller cookie. Makes a great tea party activity!
