Father’s Day is a great time to make Delicious Lemon Blueberry Donuts for Dad.
Want a little something fun and special for that awesome dad (or papa) this Father's Day? Make delicious Lemon Blueberry Donuts for dad! They are delicious along with a cup of coffee, and they are oh-so-easy for the grands to help make.
I saw a recipe for making donuts at home and was very intrigued. So I sent for Donut Baking Pans online and was eager to try the cool looking Pans out as soon as possible. I’m not one for a lot of extra gadgets in the kitchen, but these pans just called my name. They are also available in many stores of course!
Easy Peasy Cake Mix
I tried a couple recipes, but then noticed that the recipes were quite similar to a cake recipe. Would it work to make donuts from a cake mix? Why yes, it does!!
So, these donuts are made even easier by being a lemon cake mix with added blueberries.
Mix the cake up as directed on the box.
Tip: There are many cake donut recipes online (including lemon ones). If you want to teach your grands more about mixing up a recipe, feel free to use that recipe instead.
Blueberry Bonus
Toss the blueberries in the 1 tablespoon of flour. This will help keep the berries suspended in the batter and not all sink to the bottom while baking.
Spray the donut pans with cooking spray and then fill each cup ¾ full.
Tip: I used my gravy ladle from my silverware to fill each donut cup. It worked well and it was about one ladle full for each donut cup to fill it to the right level. You could also add the batter to a frosting bag or zip lock bag, cut the tip off, and squeeze the batter into the donut cups.
Bake...
Bake at 350 degrees for 14 minutes, till a toothpick comes out clean.
Cool...
Allow the donuts to cool in the pans.
Put a cooling rack over the donuts and then flip them over gently.
Set the cooling rack on a cookie sheet to catch the drippings from the icing process.
Icing, drizzle, yum...
Make the icing using the recipe below. A lemon flavored drizzle gives the donuts that extra lemon zing.
Place the powdered sugar in a bowl.
Add the lemon juice then stir in the melted butter.
Tip: If you like this thicker frosting, you can leave the icing as it is and not add extra lemon juice. This makes a nice lemon icing.
For a drizzle, add very small amounts of lemon juice (½ teaspoon at a time) to make the icing a drizzle consistency. Drizzle over the donuts. Let them stand for a bit to firm up.

Lemon Blueberry Donuts for Dad
Equipment
- 2 Donut pans
- Mixing Bowls
- Cooling rack
Ingredients
- 1 Lemon cake mix & ingredients to make the mix, i.e. eggs, oil
- 1 cup Blueberries
- 1 tablespoon Flour
- 1 ½ cup Powdered sugar
- 3 tablespoon Lemon juice (more to make drizzle)
- 1 ½ tablespoon Butter melted
- non-stick cooking spray
Instructions
- Mix up the cake as directed
- Toss blueberries in the 1 tablespoon flour and then stir into the batter
- Spray donut tins with non-stick cooking spray. Fill ¾ full of batter
- Bake at 350 degrees for 14 minutes (till toothpick comes out clean)
- Cool donuts in pans then place on cooling rack (put cooling rack over a cookie sheet to catch icing drips)
- Mix icing. Put powdered sugar in a bowl. Add lemon juice and stir. Then add melted butter and stir.
- May frost with this consistency OR add small amounts of lemon juice (½ teaspoon at a time) to get to a drizzle consistency. Drizzle over donuts. Let stand to set up.
