- 1 cup water
- 1 cup instant brown rice
- 1 cup chicken broth
- 2 tablespoon soy sauce
- 2 tablespoon corn starch
- 2 tablespoon brown sugar
- ½ teaspoon ground ginger
- 1 tablespoon oil
- 16 ounce package of stir fry vegetables
- 1 ½ cup cooked chicken cut into pieces
Pour water into a small saucepan, cover and bring to a boil.
Add rice, turn heat down, simmer till moisture is absorbed.
In a small bowl mix chicken broth, soy sauce, corn starch, brown sugar and ground ginger. Set aside.
Pour oil in a skillet and place on burner over medium heat.
Pour in stir fry vegetables. Cook and stir until tender.
Add the liquid mixture and cook until the broth thickens.
Stir in the cooked chicken pieces and cook until chicken is heated through.
Serve the stir fry over a bed of cooked rice. Enjoy!!
