Ingredients
  

  • 1 cup water
  • 1 cup instant brown rice
  • 1 cup chicken broth
  • 2 tablespoon soy sauce
  • 2 tablespoon corn starch
  • 2 tablespoon brown sugar
  • ½ teaspoon ground ginger
  • 1 tablespoon oil
  • 16 ounce package of stir fry vegetables
  • 1 ½ cup cooked chicken cut into pieces

Instructions
 

  • Pour water into a small saucepan, cover and bring to a boil.
  • Add rice, turn heat down, simmer till moisture is absorbed.
  • In a small bowl mix chicken broth, soy sauce, corn starch, brown sugar and ground ginger. Set aside.
  • Pour oil in a skillet and place on burner over medium heat.
  • Pour in stir fry vegetables. Cook and stir until tender.
  • Add the liquid mixture and cook until the broth thickens.
  • Stir in the cooked chicken pieces and cook until chicken is heated through.
  • Serve the stir fry over a bed of cooked rice. Enjoy!!
