Wash the fruit and then prepare it- taking out stem, seeds, pits, peels (depending on the type of fruit you choose to use).
Chop the fruit into pieces.
Place the water and fruit in a saucepan and put the pan on the stove.
Simmer covered for 10 minutes or so then take off the lid.
Add the sugar, lemon juice and cinnamon to taste, continue to cook and stir till fruit is soft and mashed.
Let the mixture cool down.
Place the fruit mixture into a blender and puree till smooth.
Cover a baking sheet with parchment paper or a silicone sheet and pour the mixture onto the sheet. (May use a dehydrator if you have one- follow the instructions for the device.). Let spread out but leave ⅛-1/4 inch thick.
Place in a 200 degree oven for 2-3 hours. Take out when just sticky or tacky to the touch.
Cut into strips and roll up. Wrap in plastic wrap if desired for individual rolls, or place in airtight container. When refrigerated can last for 3-6 months.
